Domaines Faiveley are one of Burgundy`s largest and arguably finest estates with many plots located in the finest sites of both the Cotes de Nuits and Cotes de Beaune. However just to the south in the Chalonnaise region they undoubtably hold court. Since the Domaine was founded in 1825, the Faiveley family has dedicated the major part of its resources to buying vineyards on the best slopes. Today they are the largest owners of vineyards in Burgundy, with about 120 hectares. Their philosophy is that great wine comes from top quality fruit and therefore yields are limited and production controlled.
Tasting Notes
This remarkable `vieilles vignes` parcel is situated half-way up the hillside on clay and limestone soils, near to the Pommard appellation, just above the Route des Grands Crus. This wine undergoes partial whole bunch fermentations, and is aged for 14 months in French oak barrels, one third of which is new. The village of Volnay is renowned for its elegant red wines. This wine exudes aromas of small red and black fruits complemented by spicy notes and a touch of oak. Its rich flavors and silky smooth tannins make it an absolute pleasure for the palate.
Food
Game birds including woodpigeon, quail and pheasant or simple Bourgogne boeuf and lamb dishes will work well.
