They produce wines using traditional techniques but without the fermentation, so that they remove nothing and gain a clean expressive drink. Tasting Notes
Made without fermentation, this sparkling is naturally alcohol-free so nothing is removed, so you gain all the great taste. This cleaner, less mechanised method makes Wild Idol a supremely pure expression of its natural ingredients. The white has crisp green apple and white peach flavours, coupled with its zesty acidity. It shows subtle floral and green tea notes which add complexity, while the fine bubbles cleanse the palate.
