Saint-Aubin is a village in the Côte de Beaune sub-region of Burgundy, nestled between the hillsides of a sub-valley in the Côte d`Or escarpment. While not the most famous of the Côte d`Or villages, especially compared to the renown of its more famous neighbours; Puligny Montrachet and Chassagne Montrachet, Saint-Aubin is one of Burgundy`s top performing wine communes in terms of both volume and vineyard quality; nearly three-quarters of its sites have premier cru status. Furthermore, while Saint-Aubin wines are rarely considered to be among the region`s finest, they are known for offering excellent value for money and can provide a good introduction to Burgundy wines of both colors.
Producer
The founder and owner of the winery, David Moret, began his involvement in the wine industry at a relatively early age. He pursued his studies in oenology and viticulture and after graduating, he wanted to set up his distinct vineyards as soon as possible. However, David’s dream got thwarted because he lacked a family domaine. Nevertheless, David continued his career and pursuit into winemaking by buying several grape varieties from other sources to vinify them. It allowed him to make several connections, friendships, and associations in the district of Côte de Beaune. It helped David later when he bought his first wine barrels in the late 90s and later when David Moret was established in 2000. Since the beginning, the winery has produced top-tier white wines in taste, quality, and standard.
Tasting Notes
David Moret’s Saint-Aubin is a vibrant and finely detailed Chardonnay, combining citrus and orchard fruit with the mineral freshness for which the appellation is known. Aromas of lemon, green apple and white peach lead into subtle floral and lightly toasted notes. The palate is crisp and precise, with refreshing acidity balanced by a rounded texture. Chalky minerality adds depth and tension, while the finish is clean, elegant and persistent, with a pleasing savoury character.
Food
Pairs well with poultry, roasted or with a cream and mushroom sauce.
