Jean-Jacques believes in relatively long cane winter pruning in order to space out the foliage followed by strict `évasivage` in the spring to reduce yields. All wines are fermented and aged in barrels for 10 months. This quality-conscious grower makes styllish, structured white Burgundy. Floral notes and exotic stone-fruit characters balance a lovely weight and texture with a thrillingly crisp, mineral finish.
