Simon and Monica Coulshaw identified the exceptional potential of Domaine des Trinites in 2006 and moved the family to the Languedoc after visiting and dismissing more than 100 unsuitable vineyard sites. A confirmed ‘terroirist’ and believer in the principals of biodynamics, Simon is already producing wines of outstanding quality at Trinites, located within the hills of Faugères and is amongst the first growers to bottle the newly created Coteaux du Languedoc Pezenas.
Tasting Notes
The Pezenas region of Coteaux de Languedoc covers the steep south facing slopes in the foothills of the Cevennes mountains. The distinct yellow schist soils encourage the soft fruit character of Grenache and Syrah grapes producing a wine which is warm and rich with invitingly soft perfumed spice on the nose, ripe plummy fruit, chocolate and savoury notes and supported by supple tannins.
Food
Serve with cold meats, pate and terrines, grilled meats, pork ribs, pasta dishes or wild mushroom risotto.
