Region

The Tokaji wine region is in the north east of Hungary, towards the borders of Slovakia and Ukraine. The region is centred around the confluence of the Tisza and Bodrog rivers, with the vineyards planted on the south and southwest slopes above. The rising mists from the rivers in autumn encourage the onset of `noble rot` in the grapes, producing one of the great and most distinct sweet wines of the world.

Producer

Chateau Pajzos is one of the great producers in Tokaj, Hungary. The estate was classified as a `First Growth` in 1772 and its sweet wines have been enjoyed by Monarchs and Emperors for centuries, Louis XV of France famously called Tokaji `Wine of Kings, King of Wines`. In 1991, the Pajzos estate was bought by Jean-Louis Laborde who also owns the esteemed Chateau Clinet in Pomerol, Bordeaux.
Tasting Notes
This fantastic Tokaji has had thorough selection of bunches and berries, harvesting great amount of Aszu berries and botrytized bunches. This is then prepared with the optimal acid sugar ratio. Fermentation takes place in 220L Szerednyei oak barrels, from the Zemplen hills and aged for 3 years. This wine has a deep golden colour with an expressive nose of ripe peaches, acacia honey and orange peel. The palate is opulent and luscious with classic botrytis notes of sweet spices, honeysuckle, candied lemon, meringue and lime, along with notes of dried apricots and figs balanced by a lovely fresh acidity which gives the wine a lovely silky mouthfeel without being cloying. Exceptionally long on the finish, an outstanding dessert wine.

Enjoy by the glass at the end of a meal with fresh fruit and chocolate desserts or try with Asian cuisine and blue cheeses. Age potential 30-50 years.
